Veggie Garden

We have really enjoyed our veggie garden, from planting to eating and the ongoing process of harvesting and processing. The garden is HUGE and we certainly will not need to purchase many fruits and veggies over the winter, which is great. There is an incredible sense of accomplishment and self-sufficiency to this. It has been overwhelming at times, especially with Bryan having been gone for 2 weeks as everything was ready to be picked. We have learned so much and are already making plans to make things "better" next year. The lessons for Katie have been phenominal and next year we are going to help her buy, plant and sell some carrots and beans for the local market in early August.

Our first "meal" - lettuce, carrots, peas, dill, green onions and potatos from the garden, and homemade sausages. It was delicious!

Purple beans - the 1st haul of beans (all 3 colors) produced 7 bags of washed, cut and blanched beans for the freezer - I think we can give the rest away!

Lettuce, we can feed an army with all the lettuce - next year we will plant less and stager the planting so that it is ready in intervals

Peas

Pumpkins! We can't wait to pick our own pumpkins. Next year we are going to plant them in their own spot as we had no idea how they spread!
